Peanut Butter Bacon Chocolate Cookies

I just found this recipe at Young Married Chic and had to share it! These cookies just sound so good!

And I love her logic in creating this concoction:

"So I got to thinking, that there are four certain things in life
1. Cookies are a fix for anything
2. Peanut Butter makes the world go round
3. Bacon, well.. bacon makes everything better
4. Chocolate drizzle makes things look fancy"

Peanut Butter Bacon Chocolate Cookies
2 1/4 cups of flour
1 tsp baking soda
1 tsp salt
2 sticks of butter, at room temperature
3/4 cup of sugar
3/4 cup of packed brown sugar
1 tsp vanilla extract
2 eggs
1/4 cup of peanut butter
1/4 cup peanut butter chips
1/4 cup chocolate chips
3 strips of cooked (cooled) bacon, diced into small pieces
Chocolate Bark, for the drizzle
Preheat the oven to 375 degrees and line a baking sheet with parchment paper. Combine the flour, baking soda, and salt in a bowl and set aside
Cream the butter and sugars in a mixer, until light and fluffy. Add in the vanilla extract and beat in the eggs one at a time. Lastly, add in the peanut butter and mix until combined.
Add the flour mixture to the egg mixture, 1/2 cup at a time (so to not flour yourself in the process) and mix until just combined. Stir in the peanut butter chips, chocolate chips, and bacon. The dough will be sticky.
With an ice cream scoop, ball the dough and place it on the lined baking sheet, evenly spaced as the cookies will spread. Bake for 10-12 (closer to 12 for larger cookies) minutes or until the cookies are slightly brown around the edges. Remove from oven and let sit for a few minutes, then allow to fully cool on a rack.
Once the cookies are cooled, melt the chocolate bark and drizzle it overtop of the cookies. Allow it to set (or not) and enjoy!
